Hinterland, a new food cart mod with a full cocktail bar and a full roster of some of Portland’s best carts, is finally ready to open in Southeast Portland.
The new module on the western end of Mount Tabor comes from neighborhood residents Ryan Schenk and Rowan Dunlap and will feature several amenities designed to give the project a “restaurant feel,” according to bar manager Taylor Gehrts. These include indoor seating, a pair of heated and covered patios, two large televisions for live sports, and a standing dish and silverware for restaurant orders.
The new pod started racking up an impressive incoming class of carts nearly a year ago, starting with Burger Stevens. Other signatories include Portland’s 2019 Cart of the Year, Matt’s BBQ Tacos, as well as 2021 Best New Carts award-winning vegan taco hotspot Poppyseed. La Taquiza Vegana and Peruvian/Okinawa/Global fusion concept Third Culture Cuisine. Carts will begin moving onto the grounds on Monday with plans to open to the public this weekend.
The backcountry bar features an open-air order window, spirits, cocktails, 12 taps, and a short range of wines with a few bottle options and six glasses. Gehrts, who has spent time at Portland bar-restaurants including Nostrana, Trifecta and Masía, plans to offer a signature cocktail for each cart’s kitchen — one idea: a cocktail mixed with La Taquiza Vegana’s horchata. . The bar will serve drip coffee and brunch cocktails starting at 9 a.m. for anyone grabbing breakfast tacos at Matt’s.
Look for Hinterland and its carts to open 9 a.m. to 9 p.m. starting Saturday, Jan. 22 at 2216 SE 50th Ave.
